Oatmeal Energy Balls

These delicious energy balls are great for making ahead of time and keeping in the refrigerator for the week for a grab and go snack. 

1 cup of Oats
1/2 cup flax seed meal (ground up flax seeds)
1/2 cup Guidry Organic Farms Pecan Butter
2/3 cup toasted unsweetened coconut flakes
1/3 cup Honey or Maple Syrup
1 tsp vanilla extract
small pinch of salt
Optional Add In: 1/2 cup mini chocolate chips, raisins or cranberries.

If your coconut flakes are not pre-toasted preheat your oven to 350 degrees and toast the coconut flakes until lightly golden, about 3 to 5 minutes.
In one bowl mix all the ingredients together. Cover and refrigerate for 20 minutes, then form into desired size balls. We like to use 1/2 TBLS scoop to make it easier. Store in the refrigerator in an airtight container. Enjoy within a week.
