Orange Pecan Muffins
Ingredients
1 ¼ cup pecan meal – Guidry Organic Pecans ground in food processor or blender
3 eggs
2/3 cup + 1 tablespoon flour
½ cup brown sugar
¼ cup honey + 1 tablespoon
1 teaspoon vanilla
1 tablespoon amaretto (optional)
2 teaspoons baking powder
1 ½ tablespoon cinnamon
zest and juice of ½ orange
½ cup buttermilk
½ cup Guidry Organic Pecans, chopped
- Preheat oven to 350
- In a medium sized bowl, beat eggs for about 2 minutes
- Add brown sugar, honey, vanilla, amaretto, orange juice and zest
- Mix together flour, pecan meal, baking powder, and cinnamon
- Add flour mixture to the wet mixture, stir
- Stir in buttermilk
- Fold in chopped pecans
- Grease muffin tin and fill ¾ full, place a whole pecans on the top in the center of the batter
- Bake for 12-15 minutes, slightly before appearing golden brown
